Aroma Library
The aromas each wood in our library produces, and the compound behind them — from oak’s vanilla and coconut to hickory’s bacon smoke and cherry’s marzipan. Every entry cites its source.
Oak
The barrel default. Toast and char dial its aromas up and down; species (American vs. French vs. Japanese) shifts the balance of coconut, spice and tannin.
American White Oak
Why: High oak (whiskey) lactones give the coconut; lignin vanillin and hemicellulose caramel furans do the rest. The classic bourbon-barrel wood.
French Oak
Why: More eugenol and ellagitannins but fewer lactones than American oak — spicier and more structured, with less coconut.
Mizunara (Japanese Oak)
Why: High oak lactones plus sandalwood-type sesquiterpenes distinctive to this species.
Fruit & orchard woods
Stone- and orchard-wood accents — fruit and floral notes from Prunus and pome-fruit aromatics, best used as a supporting wood, not a backbone.
Cherry (incl. Black Cherry & Sakura)
Why: Benzaldehyde and p-anisaldehyde (Prunus aromatics) over a soft lignin vanillin base.
Apple
Why: Fruit esters plus mild toast furans and lignin phenols — a gentle accent wood.
Mulberry
Why: Fruit-wood polyphenols with toast furans and lignin phenols on top.
Other hardwoods
Everything from tannin-heavy chestnut to smoke-bomb hickory. Ranges from gentle (ash, maple) to assertive (hickory, amburana) — dose the strong ones small.
Chestnut
Why: Very high ellagitannins and furans — fast color and astringency, low lactone.
Acacia (Black Locust)
Why: Dihydrorobinetin, robinetin and fustin flavonoids with very low ellagitannin — floral, not tannic. Light toast maximizes the honey.
Sugar Maple
Why: Hemicellulose sugars give furfural/HMF and lignin gives vanillin/syringaldehyde on toast — naturally sweet, low tannin.
Hickory
Why: Lignin pyrolysis yields guaiacol and syringol — the same smoke phenols used to cure bacon. Very assertive.
Ash
Why: Low tannin and porous; releases lactones, furanones, vanillin and benzaldehyde for a gentle sweet-spicy note.
Amburana
Why: Coumarin (the signature marker) with vanillin and spice phenolics.
Cask Finishes
Sherry, port and rum character work differently from the woods above — they come from the liquid a barrel last held, not from toasting the wood. Here’s how to get them at home.
Two ways wood flavors a spirit
Sherry (Oloroso / PX)
Well-groundedDried fruit (raisin, fig, date), walnut, caramelized sugar and nutty rancio. PX pushes heavy raisin and molasses sweetness.
- Soak your own toasted oak in real Oloroso or PX sherry for a few days to a few weeks, air-dry it, then add it to your spirit.
- Or buy pre-soaked oak — some cooperages and hobby sellers offer sherry/wine-soaked staves.
- Simplest: dose a small, measured amount of actual sherry into the spirit alongside your normal oak, and taste up.
Port / Red Wine
Well-groundedPort → red-berry jam, plum, raisin, sweet spice and a rosy tint. Dry red wine → blackcurrant, dried cherry and a dry, tannic grip.
- Soak toasted oak in ruby/tawny port or a tannic red, dry it, then add — the most common hobbyist route.
- Or buy wine/port-soaked oak staves or spirals.
- Or dose a splash of the actual port/wine into the spirit.
Rum
Optional / subtleMolasses, brown sugar, a tropical banana ester, light baking spice and added roundness.
- Buy rum-soaked oak (e.g. The Barrel Mill’s soaked spirals include rum), or
- soak toasted oak in a dark/molasses rum, dry, then add, or
- dose a little dark rum into the spirit.
